Saturday Recipe Swap- Tomato Juice Soup

A friend of mine gave me this recipe. It is a great, quick recipe when you are in a pinch to get something healthy on the table.

Ingredients

  • 1 onion
  • 2 cups chopped celery
  • 1 lb. ground meat
  • 1/2 bag frozen vegetables
  • 1 can (46 oz.) tomato juice
  • 1 box (32 oz.) chicken broth
  • 1/2 box your choice of noodles

Directions

  • Saute onions and celery with 1 tbsp oil and ground meat
  • Add 1/2 bag frozen vegetables, tomato juice, chicken broth and noodles
  • Let simmer until time to serve
